Ingredients

  • (3 cups) Flour
  • (1 tbsp) Baking Soda
  • (1/2 tsp) Sea Salt
  • (1/2 cup) Cane Sugar or Coconut Sugar
  • (2 sticks) Unsalted Butter slightly softened, cut into cubes
  • (1/2 tsp) Almond or Vanilla Extract
  • (1/3 cup) Milk or alternative
  • (3 whole) Eggs
  • (1 cup) Strawberries, chopped
  • (1/2 cup) Blueberries

Instructions

  1. Preheat the oven to 375F.
  2. In a large bowl, mix the dry ingredients: flour, baking powder + salt.
  3. In a kitchen mixer, whisk together the cubed butter with the sugar until light and fluffy.
  4. Whisk in the eggs slowly.
  5. Add the vanilla or almond extract.
  6. Add about 2/3 of the flour mixture.
  7. Slowly pour in the milk.
  8. Take the bowl off the mixer and slowly fold in the remaining flour by hand.
  9. Fold in the berries.
  10. Scoop the batter about 1/3 cup onto a parchment-lined baking sheet.
  11. Bake the scones for 25-30 minutes until golden brown.
  12. Wrap extras in parchment and store them in the freezer for an easy breakfast or snack.
