Ingredients
- (3 cups) Flour
- (1 tbsp) Baking Soda
- (1/2 tsp) Sea Salt
- (1/2 cup) Cane Sugar or Coconut Sugar
- (2 sticks) Unsalted Butter slightly softened, cut into cubes
- (1/2 tsp) Almond or Vanilla Extract
- (1/3 cup) Milk or alternative
- (3 whole) Eggs
- (1 cup) Strawberries, chopped
- (1/2 cup) Blueberries
Instructions
- Preheat the oven to 375F.
- In a large bowl, mix the dry ingredients: flour, baking powder + salt.
- In a kitchen mixer, whisk together the cubed butter with the sugar until light and fluffy.
- Whisk in the eggs slowly.
- Add the vanilla or almond extract.
- Add about 2/3 of the flour mixture.
- Slowly pour in the milk.
- Take the bowl off the mixer and slowly fold in the remaining flour by hand.
- Fold in the berries.
- Scoop the batter about 1/3 cup onto a parchment-lined baking sheet.
- Bake the scones for 25-30 minutes until golden brown.
- Wrap extras in parchment and store them in the freezer for an easy breakfast or snack.
