Ingredients

  • 1 whole chicken- broken down into breasts, quarters & wings.
  • 1 cup carrot, diced
  • 1 cup Celery, diced
  • 1 cup Onion, diced
  • 2-3 small Potato, cubed
  • 1 cup Kale
  • 2-5 cloves Garlic
  • 2 tsp Thyme
  • 3 quarts Bone Broth or Filtered Water

Instructions

  1. Season chicken pieces with salt + pepper.
  2. Heat oil in a small pan.
  3. Sear chicken on all sides until browned.
  4. Remove from pot and set aside. (Do not overcook breasts. They will finish cooking while simmering in the soup.)
  5. Add carrots, onions + celery to pot.
  6. Cook until softened, 3-5 minutes.
  7. Add sliced garlic. Cook until aromatic, 1-2 minutes.
  8. Add bone broth/water + thyme.
  9. Bring to a boil and reduce to a simmer.
  10. Add potatoes, kale, and chicken quarters.
  11. Simmer until potatoes are nearly tender, 15-20 minutes.
  12. Add breast and let simmer until the breast is fully cooked. 4-5 Minutes.
  13. Spoon into bowls + enjoy!
