Chicken Soup

Ingredients
- 1 whole chicken- broken down into breasts, quarters & wings.
- 1 cup carrot, diced
- 1 cup Celery, diced
- 1 cup Onion, diced
- 2-3 small Potato, cubed
- 1 cup Kale
- 2-5 cloves Garlic
- 2 tsp Thyme
- 3 quarts Bone Broth or Filtered Water
Instructions
- Season chicken pieces with salt + pepper.
- Heat oil in a small pan.
- Sear chicken on all sides until browned.
- Remove from pot and set aside. (Do not overcook breasts. They will finish cooking while simmering in the soup.)
- Add carrots, onions + celery to pot.
- Cook until softened, 3-5 minutes.
- Add sliced garlic. Cook until aromatic, 1-2 minutes.
- Add bone broth/water + thyme.
- Bring to a boil and reduce to a simmer.
- Add potatoes, kale, and chicken quarters.
- Simmer until potatoes are nearly tender, 15-20 minutes.
- Add breast and let simmer until the breast is fully cooked. 4-5 Minutes.
- Spoon into bowls + enjoy!
