Citrus Glazed Salmon with Roasted Vegetables

Ingredients
- 4 Salmon fillets
- 1, juiced Orange
- 1, juiced lemon
- 2 Tbsp Honey
- 1 Tbsp Dijon mustard
- 1 pound, halved Brussels sprouts
- 2, peeled and diced Sweet potatoes
- 3 Tbsp Olive oil
- 1 tsp Thyme, fresh or dried
- to taste Salt and pepper
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, whisk together orange juice, lemon juice, honey, and Dijon mustard.
- Place salmon fillets in a baking dish and pour the citrus glaze over them.
- In a separate bowl, toss Brussels sprouts and sweet potatoes with olive oil, thyme, salt, and pepper.
- Arrange the vegetables around the salmon.
- Bake for about 20-25 minutes or until the salmon is cooked through and the vegetables are tender.
- Serve the citrus-glazed salmon over roasted vegetables.
