Citrus Glazed Salmon with Roasted Vegetables

Ingredients

  • 4 Salmon fillets
  • 1, juiced Orange
  • 1, juiced lemon
  • 2 Tbsp Honey
  • 1 Tbsp Dijon mustard
  • 1 pound, halved Brussels sprouts
  • 2, peeled and diced Sweet potatoes
  • 3 Tbsp Olive oil
  • 1 tsp Thyme, fresh or dried
  • to taste Salt and pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, whisk together orange juice, lemon juice, honey, and Dijon mustard.
  3. Place salmon fillets in a baking dish and pour the citrus glaze over them.
  4. In a separate bowl, toss Brussels sprouts and sweet potatoes with olive oil, thyme, salt, and pepper.
  5. Arrange the vegetables around the salmon.
  6. Bake for about 20-25 minutes or until the salmon is cooked through and the vegetables are tender.
  7. Serve the citrus-glazed salmon over roasted vegetables.
