Ingredients
- 8, bone-in, skin-on Chicken thighs
- 1 cup Fresh cranberries
- 1/2 cup Balsamic vinegar
- 1/4 cup Honey
- 2 tablespoons Dijon mustard
- 1 teaspoon, chopped Rosemary
- 2 tablespoons Olive oil
- to taste Salt and pepper
Instructions
- Preheat the oven to 400°F (200°C).
- Season chicken thighs with salt and pepper.
- In a saucepan, combine cranberries, balsamic vinegar, honey, Dijon mustard, and rosemary. Simmer until cranberries burst and the sauce thickens.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken thighs on both sides until browned.
- Pour the cranberry balsamic glaze over the chicken.
- Transfer the skillet to the preheated oven and roast for about 25-30 minutes or until the chicken is cooked through.
- Serve the chicken with the glaze spooned over the top.
