Cranberry Balsamic Glazed Chicken

Ingredients

  • 8, bone-in, skin-on Chicken thighs
  • 1 cup Fresh cranberries
  • 1/2 cup Balsamic vinegar
  • 1/4 cup Honey
  • 2 tablespoons Dijon mustard
  • 1 teaspoon, chopped Rosemary
  • 2 tablespoons Olive oil
  • to taste Salt and pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season chicken thighs with salt and pepper.
  3. In a saucepan, combine cranberries, balsamic vinegar, honey, Dijon mustard, and rosemary. Simmer until cranberries burst and the sauce thickens.
  4. Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken thighs on both sides until browned.
  5. Pour the cranberry balsamic glaze over the chicken.
  6. Transfer the skillet to the preheated oven and roast for about 25-30 minutes or until the chicken is cooked through.
  7. Serve the chicken with the glaze spooned over the top.
