Pecan Crusted Chicken Tenders

Ingredients

  • 2 lbs Chicken tenders or chicken breast cut into 1/2" thick strips lengthwise
  • Cooking spray
  • Pecans
  • 1 cup Plain breadcrumbs
  • 2 each Egg whites
  • 1/4 cup Coconut oil or lard
  • 1/2 tsp each spice Optional seasoning: Garlic powder, onion powder, paprika, kosher salt
  • Optional:your favorite dipping sauce

Instructions

  1. Preheat oven to 400F/204C. Line two baking trays with parchment paper. Lightly spray with cooking spray.
  2. In a food processor, pulse pecans (the finer ground, the more coated the chicken will be). Add breadcrumbs and pulse again until combined. Transfer to a shallow dish.
  3. In a large bowl, whisk egg whites with melted coconut oil.
  4. In a small bowl, combine spices (if using). Season chicken with the spice mixture or salt and pepper to your taste.
  5. Dip chicken into egg white mixture, using one hand, and transfer into nut mixture. Using the other hand, toss the chicken in the nut mixture, pressing in to help adhere. Transfer to prepared tray. Repeat this step until all chicken is coated in a nut mixture.
  6. Lightly spray the tops of the chicken with cooking spray. Place trays in the oven and bake for 15-20 minutes (or until chicken is cooked internally to 165F), carefully using tongs, and flip chicken over halfway through.
  7. Serve hot with your favorite dipping sauce.
