Sesame Lime Shrimp + Cucumber Salad

Sesame Lime Shrimp + Cucumber Salad

Ingredients

  • 4 medium Cucumbers
  • 2 lbs Shrimp, medium
  • 1.5 tsp Sea salt
  • 4 tbsp Sesame Oil
  • 1/3 cup Mayonnaise
  • 1/3 bunch Cilantro
  • 2 tbsp Lime juice
  • 2 Tbsp Fish sauce

Instructions

  1. Cut the cucumbers lengthwise and scoop out the seeds.
  2. Cut the cucumbers into 1/4 inch half moons.
  3. Peel + devein the shrimp and season with sea salt.
  4. Heat sesame oil in a saucepan over medium heat.
  5. Add the shrimp, turning occasionally, about 3 minutes.
  6. Remove from heat and transfer to a cutting board.
  7. Roughly chop the shrimp.
  8. Transfer shrimp + juices to a large bowl.
  9. Chop cilantro.
  10. Add the cucumber + remaining ingredients.
  11. Toss + serve.
