Sesame Lime Shrimp + Cucumber Salad

Ingredients
- 4 medium Cucumbers
- 2 lbs Shrimp, medium
- 1.5 tsp Sea salt
- 4 tbsp Sesame Oil
- 1/3 cup Mayonnaise
- 1/3 bunch Cilantro
- 2 tbsp Lime juice
- 2 Tbsp Fish sauce
Instructions
- Cut the cucumbers lengthwise and scoop out the seeds.
- Cut the cucumbers into 1/4 inch half moons.
- Peel + devein the shrimp and season with sea salt.
- Heat sesame oil in a saucepan over medium heat.
- Add the shrimp, turning occasionally, about 3 minutes.
- Remove from heat and transfer to a cutting board.
- Roughly chop the shrimp.
- Transfer shrimp + juices to a large bowl.
- Chop cilantro.
- Add the cucumber + remaining ingredients.
- Toss + serve.
