Apple Muffins

Muffins make a great gift to a new mother. They are easy to freeze + prepare before birth. You can use then as snacks + simple breakfasts.

Ingredients

  • (1 cup) Applesauce
  • (1 stick) Butter, softened
  • (3/4 cup) Sugar or coconut sugar
  • (2 whole) Eggs
  • (2 cups) Flour, wheat, all-purpose or gluten-free blend
  • (1 tsp) Baking powder
  • (1 tsp) Baking soda
  • (1/2 tsp) Sea salt
  • (1 tsp) Cinnamon
  • (1/2 cup) Plain yogurt
  • (2 whole) Apples, peeled and chopped

Instructions

  1. Preheat oven to 350F / 177C.
  2. Whisk together the butter and sugar until creamy, 1-2 minutes.
  3. Add the applesauce.
  4. Add eggs one at a time.
  5. In a medium-sized bowl, mix the flour, baking soda, baking powder, cinnamon, and salt.
  6. Add the dry mix to the butter mix.
  7. Add the yogurt to the batter.
  8. Mix until just combined.
  9. Peel and dice the apples and gently fold them into the batter.
  10. Line or grease a muffin tin and spoon in the batter about 3/4 full.
  11. Bake for 24 minutes or until golden brown.
