This is a simple nourishing breakfast rich in choline, folate, healthy fats, and protein, and can be enjoyed at any stage.

Ingredients

  • (1 large) Avocado
  • (2 medium) Eggs
  • (1/2 tsp) Sea Salt
  • (to taste) Black Pepper

Instructions

  1. Preheat oven to 450F.
  2. Cut the avocado in half lengthwise and remove the pit.
  3. Using a spoon, remove a little avocado to make the pit wide enough for the egg.
  4. Salt and pepper each avocado half.
  5. Place each half into a small baking dish.
  6. Break one egg into each avocado center.
  7. Bake for about 15 minutes until the whites are set.
  8. Season with more sea salt and pepper.
  9. Enjoy!
