Avocado Eggs
This is a simple nourishing breakfast rich in choline, folate, healthy fats, and protein, and can be enjoyed at any stage.
Avocado Eggs

Ingredients
- (1 large) Avocado
- (2 medium) Eggs
- (1/2 tsp) Sea Salt
- (to taste) Black Pepper
Instructions
- Preheat oven to 450F.
- Cut the avocado in half lengthwise and remove the pit.
- Using a spoon, remove a little avocado to make the pit wide enough for the egg.
- Salt and pepper each avocado half.
- Place each half into a small baking dish.
- Break one egg into each avocado center.
- Bake for about 15 minutes until the whites are set.
- Season with more sea salt and pepper.
