Banana Muffins
Muffins make a great gift for a new mom. You can make a big batch and freeze them for easy one-handed snacks and breakfasts. Try reducing the sugar down to 1/2 cup.
Banana Muffins

Ingredients
- (3-4 whole) Bananas, ripe or brown
- (1 stick) Butter, softened
- (3/4 cup) Sugar or Coconut Sugar
- (2 whole) Eggs
- (2 cups) Flour, wheat, all-purpose or gluten-free blend
- (1 tsp) Baking Powder
- (1 tsp) Baking Soda
- (1/2 tsp) Sea Salt
- (1 tsp) Cinnamon
- (1/2 cup) Plain Yogurt
- (1 cup) Optional: chocolate chips or blueberries
Instructions
- Preheat oven to 350F.
- Whisk together the butter and sugar until creamy, 1-2 minutes.
- Add the bananas and mix again for 1 minute.
- Add eggs one at a time.
- In a medium-sized bowl, mix the flour, baking soda, baking powder, cinnamon, and salt.
- Add the dry mix to the butter mix.
- Mix until just combined.
- Stir in the yogurt to the batter.
- If using, add the chocolate chips or blueberries and gently fold them into the batter.
- Line or grease a muffin tin and spoon in the batter about 3/4 full.
- Bake for 24 minutes or until golden brown.
