Banana Muffins

Muffins make a great gift for a new mom. You can make a big batch and freeze them for easy one-handed snacks and breakfasts. Try reducing the sugar down to 1/2 cup.

Ingredients

  • (3-4 whole) Bananas, ripe or brown
  • (1 stick) Butter, softened
  • (3/4 cup) Sugar or Coconut Sugar
  • (2 whole) Eggs
  • (2 cups) Flour, wheat, all-purpose or gluten-free blend
  • (1 tsp) Baking Powder
  • (1 tsp) Baking Soda
  • (1/2 tsp) Sea Salt
  • (1 tsp) Cinnamon
  • (1/2 cup) Plain Yogurt
  • (1 cup) Optional: chocolate chips or blueberries

Instructions

  1. Preheat oven to 350F.
  2. Whisk together the butter and sugar until creamy, 1-2 minutes.
  3. Add the bananas and mix again for 1 minute.
  4. Add eggs one at a time.
  5. In a medium-sized bowl, mix the flour, baking soda, baking powder, cinnamon, and salt.
  6. Add the dry mix to the butter mix.
  7. Mix until just combined.
  8. Stir in the yogurt to the batter.
  9. If using, add the chocolate chips or blueberries and gently fold them into the batter.
  10. Line or grease a muffin tin and spoon in the batter about 3/4 full.
  11. Bake for 24 minutes or until golden brown.
