Ingredients

  • (1 pound) Stew beef, cubed
  • (1/2 cup) Pearl barley
  • (3) Carrots, sliced
  • (3 stalks) Celery, chopped
  • (1 medium) Onion, chopped
  • (6 cups) Beef broth
  • (3 cloves) Garlic, minced
  • (1 tsp) Thyme, fresh or dried
  • (2 Tbsp) Olive oil
  • (to taste) Salt and pepper

Instructions

  1. In a pot, heat olive oil over medium heat.
  2. Brown stew beef until seared.
  3. Add chopped onion, sliced carrots, chopped celery, and minced garlic.
  4. Cook until vegetables are softened.
  5. Pour in beef broth and add pearl barley. Bring to a simmer.
  6. Season with thyme, salt, and pepper.
  7. Simmer for about 1-1.5 hours or until beef is tender.
  8. Serve hot, garnished with fresh herbs if desired.
