Beef and Barley Soup

Ingredients
- (1 pound) Stew beef, cubed
- (1/2 cup) Pearl barley
- (3) Carrots, sliced
- (3 stalks) Celery, chopped
- (1 medium) Onion, chopped
- (6 cups) Beef broth
- (3 cloves) Garlic, minced
- (1 tsp) Thyme, fresh or dried
- (2 Tbsp) Olive oil
- (to taste) Salt and pepper
Instructions
- In a pot, heat olive oil over medium heat.
- Brown stew beef until seared.
- Add chopped onion, sliced carrots, chopped celery, and minced garlic.
- Cook until vegetables are softened.
- Pour in beef broth and add pearl barley. Bring to a simmer.
- Season with thyme, salt, and pepper.
- Simmer for about 1-1.5 hours or until beef is tender.
- Serve hot, garnished with fresh herbs if desired.
