Carrot Ginger Soup

Ingredients
- 1.5 lb Carrot
- (1 1/2 medium) Onion
- (2 tbsp) Ginger
- (2 tbsp) Coconut oil
- (1 tbsp) Coriander
- (1 tsp) Curry powder
- (3 cups) Bone broth or water
Instructions
- Heat oil in a small pot.
- Add carrots & season with salt.
- Cook until just starting to brown. 5 min.
- Add onion, ginger, coriander, and curry paste. Cook until the onion is translucent. 3-4 min
- Add 3 cups of bone broth or water.
- Bring to a boil and reduce to a simmer.
- Cook until carrots are very tender. 20-25 minutes.
- Puree until smooth. Season with salt & pepper to taste.
