Carrot Ginger Soup

Ingredients

  • 1.5 lb Carrot
  • (1 1/2 medium) Onion
  • (2 tbsp) Ginger
  • (2 tbsp) Coconut oil
  • (1 tbsp) Coriander
  • (1 tsp) Curry powder
  • (3 cups) Bone broth or water

Instructions

  1. Heat oil in a small pot.
  2. Add carrots & season with salt.
  3. Cook until just starting to brown. 5 min.
  4. Add onion, ginger, coriander, and curry paste. Cook until the onion is translucent. 3-4 min
  5. Add 3 cups of bone broth or water.
  6. Bring to a boil and reduce to a simmer.
  7. Cook until carrots are very tender. 20-25 minutes.
  8. Puree until smooth. Season with salt & pepper to taste.
