Chocolate Covered Dates

Ingredients
- 12 whole Dates, deglet or medjool
- 1/4 cup Nut Butter
- 1 cup Chocolate Chips
- 1 tsp Coconut Oil
- 1/4 cup Coconut Shreds
- 12 whole Almonds
Instructions
- Slice lengthwise and pit each date.
- Take a small spoon and fill each date with nut butter. Almond or peanut is a favorite.
- Push an almond into the center. Extra points if the almond is soaked, sprouted, and roasted!
- Set on a parchment-lined plate or cookie sheet.
- Melt the chocolate + coconut oil in a bowl over a pot of boiling water, i.e. "double boiler method".
- Stir often until melted smooth.
- Dip each date into the chocolate or drizzle it over the top of each.
- Sprinkle coconut shreds over the top.
- Place the tray into the freezer for at least 1 hour.
- Store in an airtight container in the freezer for a delicious cold treat.
- Upon eating, let the dates slightly thaw for 3-5min.
