Ingredients

  • 12 whole Dates, deglet or medjool
  • 1/4 cup Nut Butter
  • 1 cup Chocolate Chips
  • 1 tsp Coconut Oil
  • 1/4 cup Coconut Shreds
  • 12 whole Almonds

Instructions

  1. Slice lengthwise and pit each date.
  2. Take a small spoon and fill each date with nut butter. Almond or peanut is a favorite.
  3. Push an almond into the center. Extra points if the almond is soaked, sprouted, and roasted!
  4. Set on a parchment-lined plate or cookie sheet.
  5. Melt the chocolate + coconut oil in a bowl over a pot of boiling water, i.e. "double boiler method".
  6. Stir often until melted smooth.
  7. Dip each date into the chocolate or drizzle it over the top of each.
  8. Sprinkle coconut shreds over the top.
  9. Place the tray into the freezer for at least 1 hour.
  10. Store in an airtight container in the freezer for a delicious cold treat.
  11. Upon eating, let the dates slightly thaw for 3-5min.
  12. Dates are packed with minerals including potassium which can help with restless legs + cramps. Research shows dates can help support a faster, low-intervention birth.
