Chocolate Avocado Pudding

Ingredients

  • 2 whole Avocado, soft & ripe
  • 1/2 cup Coconut milk
  • 4 tbsp Cocoa or cacao powder
  • 4-6 tbsp, to taste Maple syrup or raw honey
  • 1 tsp Vanilla extract
  • 1-2 tbsp Optional: collagen powder
  • Optional toppings: chocolate chips, coconut shreds, hemp seeds, coconut cream

Instructions

  1. Combine all ingredients in a blender or food processor and blend until smooth, scraping down the sides in between.
  2. Add more coconut milk if needed to help blend.
  3. Give it a taste to see if you prefer more chocolate (add more cacao powder, 1 tablespoon at a time), or more sweetness (add a splash of maple syrup or more vanilla).
  4. Blend until smooth.
  5. Transfer to an airtight container for storing or individual cups.
  6. Refrigerate for up to 4 days.
  7. Serve chilled with your favorite toppings.
