Chocolate Avocado Pudding

Chocolate Avocado Pudding

Ingredients
- 2 whole Avocado, soft & ripe
- 1/2 cup Coconut milk
- 4 tbsp Cocoa or cacao powder
- 4-6 tbsp, to taste Maple syrup or raw honey
- 1 tsp Vanilla extract
- 1-2 tbsp Optional: collagen powder
- Optional toppings: chocolate chips, coconut shreds, hemp seeds, coconut cream
Instructions
- Combine all ingredients in a blender or food processor and blend until smooth, scraping down the sides in between.
- Add more coconut milk if needed to help blend.
- Give it a taste to see if you prefer more chocolate (add more cacao powder, 1 tablespoon at a time), or more sweetness (add a splash of maple syrup or more vanilla).
- Blend until smooth.
- Transfer to an airtight container for storing or individual cups.
- Refrigerate for up to 4 days.
- Serve chilled with your favorite toppings.
