Ingredients

  • 2 Cucumbers, peeled and thinly sliced
  • 1/2 Red onion, thinly sliced
  • 1/2 tbsp Red wine vinegar
  • 2 tbsp Olive oil
  • 1.5 tsp Ground turmeric
  • 1 tbsp Fresh ginger, grated
  • Sea Salt

Instructions

  1. In a mixing bowl add sliced cucumbers, red onion, and 1 tsp of sea salt. Mix to combine.
  2. In a small skillet, over medium-low heat add olive oil.
  3. Add turmeric and ginger. Cook until fragrant, stirring constantly. About 1 minute.
  4. Add olive oil mixture to bowl over cucumbers and onion. Stir to combine.
  5. Add red wine vinegar and gently stir.
  6. Season with salt and pepper to taste.
