Cucumber Salad

Ingredients
- 2 Cucumbers, peeled and thinly sliced
- 1/2 Red onion, thinly sliced
- 1/2 tbsp Red wine vinegar
- 2 tbsp Olive oil
- 1.5 tsp Ground turmeric
- 1 tbsp Fresh ginger, grated
- Sea Salt
Instructions
- In a mixing bowl add sliced cucumbers, red onion, and 1 tsp of sea salt. Mix to combine.
- In a small skillet, over medium-low heat add olive oil.
- Add turmeric and ginger. Cook until fragrant, stirring constantly. About 1 minute.
- Add olive oil mixture to bowl over cucumbers and onion. Stir to combine.
- Add red wine vinegar and gently stir.
- Season with salt and pepper to taste.
