Dark Chocolate Sweet Potato Cupcakes

Ingredients
- 2 cups Baked Sweet Potatoes
- 3/4 cup Cacao or cocoa powder
- 1/4 cup Coconut flour or all-purpose flour
- 1/2 cup Coconut oil
- 1/2 cup Maple syrup
- 2 whole Eggs, tempered
- 2 tsp Baking powder
- 1 tsp Baking soda
- 1/2 tsp Vanilla extract
- 1/2 tsp Sea salt
Instructions
- Preheat oven to 350F.
- Let the baked sweet potatoes cool to room temperature before scooping out the inside and measuring 2 cups.
- Combine in a large bowl with softened coconut oil, maple syrup, vanilla + eggs.
- In a separate bowl, combine dry ingredients: cacao powder, coconut flour, baking powder, baking soda, and salt.
- Sift dry ingredients into wet, mixing thoroughly.
- Line or grease a muffin tin and fill 3/4 full with batter.
- Bake 20-22 minutes until a toothpick comes out clean in the center.
