Ingredients

  • 2 cups Baked Sweet Potatoes
  • 3/4 cup Cacao or cocoa powder
  • 1/4 cup Coconut flour or all-purpose flour
  • 1/2 cup Coconut oil
  • 1/2 cup Maple syrup
  • 2 whole Eggs, tempered
  • 2 tsp Baking powder
  • 1 tsp Baking soda
  • 1/2 tsp Vanilla extract
  • 1/2 tsp Sea salt

Instructions

  1. Preheat oven to 350F.
  2. Let the baked sweet potatoes cool to room temperature before scooping out the inside and measuring 2 cups.
  3. Combine in a large bowl with softened coconut oil, maple syrup, vanilla + eggs.
  4. In a separate bowl, combine dry ingredients: cacao powder, coconut flour, baking powder, baking soda, and salt.
  5. Sift dry ingredients into wet, mixing thoroughly.
  6. Line or grease a muffin tin and fill 3/4 full with batter.
  7. Bake 20-22 minutes until a toothpick comes out clean in the center.
