Fragrant Red Lentils

Ingredients

  • 1 cup Red Lentils, dry and rinsed
  • 4 cups Water
  • 1/2 tsp Turmeric, ground
  • 1 Bay Leaf
  • 2 tbsp Butter, ghee, or coconut Oil
  • 1 cup Yellow onion, diced
  • 2 tbsp Ginger, peeled and minced or grated on a Microplane
  • 2 tbsp Garlic, minced
  • 1 Serrano pepper, minced, remove seeds if desire less spicy
  • 1 tbsp Coriander, ground
  • 1 tbsp cumin, ground
  • 1 tbsp Paprika
  • 1/4 tsp cinnamon
  • 1/4 cup Cilantro, chopped
  • 2 tbsp Mint, chopped
  • 1 Lemon, zest and juice
  • Salt and black pepper (to taste)

Instructions

  1. In a medium pot, heat lentils, water, turmeric, and bay leaf to a boil.
  2. Reduce heat to medium and simmer until tender but still firm, about 10-12 minutes.
  3. Meanwhile, in a small sauté pan toast your spices. Heat the oil, then add the onion, ginger, garlic, Serrano, coriander, cumin, paprika, and cinnamon. Cook on low heat until onion is soft and spices are fragrant 4-5 minutes.
  4. Drain lentils and place them in a serving bowl.
  5. Stir in cooked onions and spices, cilantro and mint, lemon zest, and half of the lemon juice.
  6. Taste and adjust seasoning with salt and black pepper, and more lemon juice if desired.
