Fragrant Forbidden Rice with Almonds

Fragrant Forbidden Rice with Almonds

Ingredients

  • 2 cups Black forbidden rice
  • 1 tbsp Coconut oil
  • 4 stocks Scallions, whites finely chopped, green tops sliced thin
  • 1 tbsp Garlic, minced
  • 1 Tbsp Fresh ginger, peeled and minced or grated with a Microplane
  • 1/2 cup Sliced almonds, toasted
  • Kosher salt, to taste

Instructions

  1. Cook Forbidden rice according to the instructions on the label.
  2. Meanwhile, in a small sauté pan, heat the coconut oil.
  3. When hot, add the white parts of the scallions, garlic, and ginger. Cook over medium heat while stirring, until golden and fragrant, about 3 minutes.
  4. When rice is cooked, use a fork to fluff, adding in the sautéed white scallion, garlic, and ginger.
  5. Taste and adjust seasoning with salt.
  6. Just before serving, stir in the toasted almonds and sliced green scallions.
