Fragrant Forbidden Rice with Almonds

Ingredients
- 2 cups Black forbidden rice
- 1 tbsp Coconut oil
- 4 stocks Scallions, whites finely chopped, green tops sliced thin
- 1 tbsp Garlic, minced
- 1 Tbsp Fresh ginger, peeled and minced or grated with a Microplane
- 1/2 cup Sliced almonds, toasted
- Kosher salt, to taste
Instructions
- Cook Forbidden rice according to the instructions on the label.
- Meanwhile, in a small sauté pan, heat the coconut oil.
- When hot, add the white parts of the scallions, garlic, and ginger. Cook over medium heat while stirring, until golden and fragrant, about 3 minutes.
- When rice is cooked, use a fork to fluff, adding in the sautéed white scallion, garlic, and ginger.
- Taste and adjust seasoning with salt.
- Just before serving, stir in the toasted almonds and sliced green scallions.
