Garlicky Dark Leafy Greens Soup

Ingredients

  • 1 tbsp Ghee, butter, or coconut Oil
  • 3 cups Broth, bone, or veggie
  • 1 tsp Turmeric, powder or freshly grated
  • 1/2 medium Onion, chopped
  • 1 inch Ginger, peeled and chopped
  • 4-6 cloves Garlic, peeled and chopped
  • 1 cup packed Kale, chopped
  • 4 cups packed Swiss chard, chopped
  • 1 cup Parsley, chopped
  • Sea Salt (to taste)
  • Pepper (to taste)

Instructions

  1. In a medium pot over med-high heat, warm the ghee, butter, or coconut oil.
  2. Peel and chop the ginger, onion, and garlic and add to the pot, sautéing for 2-3 minutes until aromatic.
  3. Add turmeric.
  4. Add two cups of broth, reserving 1 cup.
  5. Bring to a gentle boil.
  6. Add the kale and chard.
  7. Cover and simmer for 10 minutes.
  8. Remove from heat and stir in the parsley.
  9. Add the soup to a high-power blender along with the reserved cup of broth.
  10. Blend for 1-2 minutes until smooth.
  11. Add salt and pepper to taste.
