Garlicky Dark Leafy Greens Soup

Ingredients
- 1 tbsp Ghee, butter, or coconut Oil
- 3 cups Broth, bone, or veggie
- 1 tsp Turmeric, powder or freshly grated
- 1/2 medium Onion, chopped
- 1 inch Ginger, peeled and chopped
- 4-6 cloves Garlic, peeled and chopped
- 1 cup packed Kale, chopped
- 4 cups packed Swiss chard, chopped
- 1 cup Parsley, chopped
- Sea Salt (to taste)
- Pepper (to taste)
Instructions
- In a medium pot over med-high heat, warm the ghee, butter, or coconut oil.
- Peel and chop the ginger, onion, and garlic and add to the pot, sautéing for 2-3 minutes until aromatic.
- Add turmeric.
- Add two cups of broth, reserving 1 cup.
- Bring to a gentle boil.
- Add the kale and chard.
- Cover and simmer for 10 minutes.
- Remove from heat and stir in the parsley.
- Add the soup to a high-power blender along with the reserved cup of broth.
- Blend for 1-2 minutes until smooth.
- Add salt and pepper to taste.
