Ginger Fried Rice

Ingredients
- 2 cups Cooked rice
- 3-5 strips Bacon
- 1/2 cup Onion, diced
- 1/2 cup Celery, diced
- 1/2 cup Carrot, diced
- 1-2 inches Ginger, grated
- 1 tbsp - to taste Tamari or coconut aminos
Instructions
- Cook Bacon in a medium-sized pan until crisp.
- Pour excess bacon fat into a glass jar (save for future recipes!), saving 1-2 tbsp in the pan to cook with.
- Add carrot, onion, and celery.
- Cook until tender.
- Add ginger and cook an additional 1-2 minutes.
- Add rice and stir to combine.
- Break bacon into large bits and combine with rice.
- Add tamari or coconut aminos to taste.
- Stir rice on low for an additional 2-4 minutes to combine & serve.
