Ginger Fried Rice

Ingredients

  • 2 cups Cooked rice
  • 3-5 strips Bacon
  • 1/2 cup Onion, diced
  • 1/2 cup Celery, diced
  • 1/2 cup Carrot, diced
  • 1-2 inches Ginger, grated
  • 1 tbsp - to taste Tamari or coconut aminos

Instructions

  1. Cook Bacon in a medium-sized pan until crisp.
  2. Pour excess bacon fat into a glass jar (save for future recipes!), saving 1-2 tbsp in the pan to cook with.
  3. Add carrot, onion, and celery.
  4. Cook until tender.
  5. Add ginger and cook an additional 1-2 minutes.
  6. Add rice and stir to combine.
  7. Break bacon into large bits and combine with rice.
  8. Add tamari or coconut aminos to taste.
  9. Stir rice on low for an additional 2-4 minutes to combine & serve.
