Gluten-free Chocolate Chip Cookies

Ingredients
- 3/4 cup Cane sugar or coconut sugar
- 1 cup / 2 sticks Butter or coconut oil, softened
- 2 whole Eggs
- 2 tbsp Vanilla extract
- 1/2 cup Almond or peanut butter
- 2 cups Almond flour
- 1 tsp Baking soda
- 1/2 tsp Sea salt
- 2 cups Chocolate chips
Instructions
- Preheat oven to 350F.
- In a mixer, beat the softened butter or oil with the sugar. Mix 1-2 minutes until creamy.
- Scrape down the sides with a rubber spatula.
- Add eggs, one at a time.
- Add the vanilla.
- Add the nut butter and mix well for 1-2 minutes.
- In a separate bowl, whisk together the almond flour, baking soda, and salt.
- Add the flour mixture and mix until just combined.
- Stir in the chocolate chips.
- On a parchment-lined cookie sheet, scoop out 1-2 tbsp balls.
- Bake for 10 minutes.
- The centers may still be slightly soft but the tops should be golden brown.
- Let cool for at least 5 minutes before enjoying.
- This dough freezes well for freshly baked cookies when you crave them.
