Gluten-free Chocolate Chip Cookies

Gluten-free Chocolate Chip Cookies

Ingredients

  • 3/4 cup Cane sugar or coconut sugar
  • 1 cup / 2 sticks Butter or coconut oil, softened
  • 2 whole Eggs
  • 2 tbsp Vanilla extract
  • 1/2 cup Almond or peanut butter
  • 2 cups Almond flour
  • 1 tsp Baking soda
  • 1/2 tsp Sea salt
  • 2 cups Chocolate chips

Instructions

  1. Preheat oven to 350F.
  2. In a mixer, beat the softened butter or oil with the sugar. Mix 1-2 minutes until creamy.
  3. Scrape down the sides with a rubber spatula.
  4. Add eggs, one at a time.
  5. Add the vanilla.
  6. Add the nut butter and mix well for 1-2 minutes.
  7. In a separate bowl, whisk together the almond flour, baking soda, and salt.
  8. Add the flour mixture and mix until just combined.
  9. Stir in the chocolate chips.
  10. On a parchment-lined cookie sheet, scoop out 1-2 tbsp balls.
  11. Bake for 10 minutes.
  12. The centers may still be slightly soft but the tops should be golden brown.
  13. Let cool for at least 5 minutes before enjoying.
  14. This dough freezes well for freshly baked cookies when you crave them.
