Grain-free Granola

Ingredients

  • 1/2 cup Butter or coconut oil
  • 3 cups Coconut flakes
  • 1 cup Sliced almonds
  • 1 cup Chopped nuts: walnut, pecan, macadamia, cashew, hazelnut
  • 2 tbsp Chia seeds
  • 1/2 cup Pumpkin or sunflower seeds
  • 2 tbsp Maple syrup or honey
  • 2 tsp Cinnamon
  • 1/2 tsp Sea salt

Instructions

  1. Mix all dry ingredients.
  2. Warm honey/maple syrup + butter in a saucepan until butter is melted.
  3. Stir into dry ingredients.
  4. Mix well.
  5. Line a 9x13 sheet pan with parchment paper.
  6. Spread mix onto pan.
  7. Bake 15-20 min @ 350F until golden brown.
  8. Allow to cool completely. Will crisp as it cools.
