Lemon Garlic Chicken with Winter Greens

Ingredients
- 4, boneless, skinless Chicken breasts
- 4 cups, chopped Kale
- 2, juiced Lemon
- 4, minced Garlic cloves
- 1/2 cup Chicken broth
- 3 tablespoons Olive oil
- 1/2 teaspoon Red pepper flakes
- Salt and pepper to taste
Instructions
- Season chicken breasts with salt and pepper.
- In a large bowl, add the kale + lemon and squeeze the kale with your fists tightly so that the lemon juice soaks into the leaves. Let sit at least 5 minutes.
- In a large skillet, heat olive oil over medium-high heat. Sear chicken breasts until browned on both sides. Set chicken to the side.
- Add minced garlic and red pepper flakes to the skillet. Cook until garlic is fragrant.
- Add the kale + lemon mixture and cook another 2-3 minutes.
- Add the chicken back in to the skillet to warm.
- Serve + enjoy!
