Lemon Garlic Chicken with Winter Greens

Lemon Garlic Chicken with Winter Greens

Ingredients

  • 4, boneless, skinless Chicken breasts
  • 4 cups, chopped Kale
  • 2, juiced Lemon
  • 4, minced Garlic cloves
  • 1/2 cup Chicken broth
  • 3 tablespoons Olive oil
  • 1/2 teaspoon Red pepper flakes
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts with salt and pepper.
  2. In a large bowl, add the kale + lemon and squeeze the kale with your fists tightly so that the lemon juice soaks into the leaves. Let sit at least 5 minutes.
  3. In a large skillet, heat olive oil over medium-high heat. Sear chicken breasts until browned on both sides. Set chicken to the side.
  4. Add minced garlic and red pepper flakes to the skillet. Cook until garlic is fragrant.
  5. Add the kale + lemon mixture and cook another 2-3 minutes.
  6. Add the chicken back in to the skillet to warm.
  7. Serve + enjoy!
