Ingredients

  • 3 lbs Ground Meat, any combination of ground beef, pork, and/or lamb. ()
  • 2 tbsp Olive oil
  • 1 medium Onion
  • 6 cloves, minced Garlic
  • 2 tbsp Tomato paste
  • 1/2 cup Oats, toasted
  • 2/3 cups Milk or alternative
  • 3 large Eggs
  • 1 tsp Dried thyme

Instructions

  1. Heat oven to 350F/177C.
  2. Cook onion over medium heat until softened.
  3. Add garlic and cook until fragrant, stirring often.
  4. Stir in tomato paste until well combined and let cool.
  5. In a large mixing bowl combine the oats and milk of choice.
  6. Mix to thicken and add eggs, thyme, salt, pepper, and cooled onion mixture until fully combined.
  7. Gently mix in ground meat. Be careful not to overwork the meat.
  8. Roll meat out onto an oiled, parchment-lined baking sheet.
  9. Form into 1 large or 2 smaller loaves.
  10. Optionally, top with ketchup cut with a bit of bone broth to glaze before baking.
  11. Bake in the oven for 45-60 minutes. Check with a meat thermometer that the center has reached 160F/71C degrees.
  12. Allow to rest for at least 15 minutes before slicing.
