Meatballs with liver

Ingredients
- 1 lb Ground meat - beef, pork, chicken, turkey, or any combination
- 1-2 oz Liver - chicken, beef, or pork
- Select organic, grass-fed, or pasture-raised
- 1/2 cup Sprouted oats
- 1 whole Egg
- 1 tsp Sea salt
- to taste or about 3 tbsp total Spices, cumin, turmeric, coriander, curry, etc.
- 1/2 medium Onion
- 2 Garlic cloves, grated
- 2-3 tbsp Parsley, chopped
Instructions
- Preheat Oven to 300F/149C.
- Toast oats in the oven for 5 minutes.
- Grind the oats in a blender until coarse.
- Heat a skillet on medium heat.
- Add minced onion to the pan, reducing heat to medium-low. (minced celery or root vegetables may be added as well)
- When the onion softens in the pan, add liver and garlic. Stirring frequently, breaking up the liver as you stir.
- Once the liver is cooked through and the vegetables are tender, remove them from the pan to cool.
- In a large bowl, gently combine ground meat with the remaining ingredients, liver, and vegetables.
- Mix gently until evenly combined.
- Roll into 1.5-inch balls and place on a sheet tray.
- Bake at 415F/213C degrees for 7-10 minutes, until golden browned and firm.
