Ingredients
- 4 yolks Egg yolks
- 2 tbsp Lemon juice
- 1/2 tsp Mustard, dijon
- 1.5 cups Avocado oil
- 1/2 tbsp Sea salt
- 1/4 tsp Honey, optional
Instructions
- Place eggs, mustard, salt, and lemon juice into a blender or food processor. (This process can be done by vigorous whisking as well.)
- Start the blender at the lowest speed, increasing to medium-low.
- While the machine is running slowly drizzle oil in through the plug opening.
- Continue to add oil in a very slow drizzle as the mixture thickens. 45 seconds to 1 minute.
- Stop the machine.
- Remove the mayonnaise from the machine into a small bowl.
- Stir in any oil sitting on top and add additional seasoning if desired.
