Ingredients

  • 4 yolks Egg yolks
  • 2 tbsp Lemon juice
  • 1/2 tsp Mustard, dijon
  • 1.5 cups Avocado oil
  • 1/2 tbsp Sea salt
  • 1/4 tsp Honey, optional

Instructions

  1. Place eggs, mustard, salt, and lemon juice into a blender or food processor. (This process can be done by vigorous whisking as well.)
  2. Start the blender at the lowest speed, increasing to medium-low.
  3. While the machine is running slowly drizzle oil in through the plug opening.
  4. Continue to add oil in a very slow drizzle as the mixture thickens. 45 seconds to 1 minute.
  5. Stop the machine.
  6. Remove the mayonnaise from the machine into a small bowl.
  7. Stir in any oil sitting on top and add additional seasoning if desired.
