Nepali Rice Pudding

Ingredients
- 6 cups Filtered water
- 1 cup Basmati rice
- 1/4 cup Coconut sugar or brown sugar
- 1/4 cup Ghee, coconut oil, or butter
- 2 tsp Ground ginger
- 3/4 tsp Cinnamon
- Nutmeg or allspice pinch
- 1/4 tsp Ground black pepper
- 1 cup Milk or alternative
Instructions
- Bring water + rice to boil, about 20 minutes, stirring until it begins to thicken.
- Add sugar, spices + ghee/butter/coconut oil.
- Add extra water if the pudding is too thick.
- Add milk and stir for a few more minutes to thicken.
- Turn off the heat.
- Serve hot with ghee + sugar to taste.
