Nepali Rice Pudding

Nepali Rice Pudding

Ingredients

  • 6 cups Filtered water
  • 1 cup Basmati rice
  • 1/4 cup Coconut sugar or brown sugar
  • 1/4 cup Ghee, coconut oil, or butter
  • 2 tsp Ground ginger
  • 3/4 tsp Cinnamon
  • Nutmeg or allspice pinch
  • 1/4 tsp Ground black pepper
  • 1 cup Milk or alternative

Instructions

  1. Bring water + rice to boil, about 20 minutes, stirring until it begins to thicken.
  2. Add sugar, spices + ghee/butter/coconut oil.
  3. Add extra water if the pudding is too thick.
  4. Add milk and stir for a few more minutes to thicken.
  5. Turn off the heat.
  6. Serve hot with ghee + sugar to taste.
