Roasted Chickpeas

Ingredients

  • 2 15 oz cans Chickpeas, drained + rinsed
  • 2 Tbsp Olive oil
  • 1 tsp Turmeric, ground
  • 1 tsp Cumin, ground
  • 1 tsp Coriander, ground
  • 1/2 tsp Ginger, ground
  • 1/2 tsp Cinnamon, ground
  • 1/4 tsp Black pepper, ground
  • - Sea Salt to taste

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. RINSE + Pat dry 2 cans of chickpeas, then toss with 2 tbsp olive oil.
  3. In a bowl, mix 1 tsp each of ground turmeric, cumin, and coriander, along with 1/2 tsp each of ground ginger, cinnamon, and black pepper, plus salt to taste.
  4. Sprinkle spice mixture over chickpeas and toss to coat evenly.
  5. Spread chickpeas on the prepared baking sheet and roast for 25-30 minutes until crispy, shaking halfway through.
  6. Let cool slightly before serving.
  7. Enjoy as a snack or topping for various dishes.
