Roasted Spaghetti Squash

Ingredients
- 1, cut lengthwise and deseeded Spaghetti Squash
- 1.5 tbsp Olive Oil
- 1 tsp Salt
- Optional: Pair with Meatballs
Instructions
- Preheat oven to 400F/204C.
- Drizzle the inside of the squash with olive oil and sprinkle with salt & pepper.
- Place squash cut side down on parchment lined baking pan.
- Using a fork poke holes along the outside of the squash.
- Roast for 30-40 minutes. Should be lightly browned on the outside and just tender on the inside.
- Remove from oven and allow to cool flipped over, cut side up.
- Use a fork to scrape and fluff spaghetti squash away from the outer shell.
- Serve with a choice of Meatballs, tomatoes, and fresh herbs.
