Roasted Spaghetti Squash

Roasted Spaghetti Squash

Ingredients

  • 1, cut lengthwise and deseeded Spaghetti Squash
  • 1.5 tbsp Olive Oil
  • 1 tsp Salt
  • Optional: Pair with Meatballs

Instructions

  1. Preheat oven to 400F/204C.
  2. Drizzle the inside of the squash with olive oil and sprinkle with salt & pepper.
  3. Place squash cut side down on parchment lined baking pan.
  4. Using a fork poke holes along the outside of the squash.
  5. Roast for 30-40 minutes. Should be lightly browned on the outside and just tender on the inside.
  6. Remove from oven and allow to cool flipped over, cut side up.
  7. Use a fork to scrape and fluff spaghetti squash away from the outer shell.
  8. Serve with a choice of Meatballs, tomatoes, and fresh herbs.
