Slow Roasted Salmon

Ingredients

  • 2 lbs Salmon fillet
  • 1/2 medium Fennel bulb, sliced thin
  • 1/2 medium Bell pepper, sliced thin
  • 2 tbsp Olive pil
  • 1 Lemon, sliced thin
  • 1 Orange, sliced thin
  • 1/4 cup Fresh herbs - dill, mint, parsley, oregano, etc.
  • Sea salt

Instructions

  1. Preheat oven to 275F/135C.
  2. Rinse salmon and pat dry with a paper towel.
  3. Mix fennel, bell pepper, lemon, orange, herbs, and 1/2 tsp salt in a small bowl.
  4. Make a bed for salmon on a baking sheet using 1/2 of the veg mixture.
  5. Add Salmon over top, and season with salt.
  6. Top salmon with the remaining mixture.
  7. Drizzle olive oil over the salmon and veg mixture.
  8. Bake until cooked thoroughly, 20-25 minutes. Salmon should be just opaque for medium-rare. For more well-done cook for 25-30 minutes.
  9. Season with salt and pepper to taste.
