Slow Roasted Salmon

Ingredients
- 2 lbs Salmon fillet
- 1/2 medium Fennel bulb, sliced thin
- 1/2 medium Bell pepper, sliced thin
- 2 tbsp Olive pil
- 1 Lemon, sliced thin
- 1 Orange, sliced thin
- 1/4 cup Fresh herbs - dill, mint, parsley, oregano, etc.
- Sea salt
Instructions
- Preheat oven to 275F/135C.
- Rinse salmon and pat dry with a paper towel.
- Mix fennel, bell pepper, lemon, orange, herbs, and 1/2 tsp salt in a small bowl.
- Make a bed for salmon on a baking sheet using 1/2 of the veg mixture.
- Add Salmon over top, and season with salt.
- Top salmon with the remaining mixture.
- Drizzle olive oil over the salmon and veg mixture.
- Bake until cooked thoroughly, 20-25 minutes. Salmon should be just opaque for medium-rare. For more well-done cook for 25-30 minutes.
- Season with salt and pepper to taste.
