Slow-cooker Beef Chili

Slow-cooker Beef Chili

Ingredients

  • 1.5 pounds Ground beef
  • 5 pounds Liver
  • 15 oz Kidney beans, drained + rinsed
  • 15 oz Crushed tomatoes
  • 1.5 cups Bone Broth
  • 1 medium Onion, chopped
  • 2 medium Bell peppers, chopped
  • 2 Tbsp Chili powder
  • 1 Tbsp Cumin
  • 1 clove Garlic, minced
  • - Salt and pepper to taste

Instructions

  1. Puree the raw beef liver in a food processor or high-powered blender. (You can also finely chop the liver but the puree "hides" the liver more effectively.)
  2. In a skillet, brown ground beef over medium-high heat. Add the liver puree after 1-2 minutes. Drain excess fat.
  3. Transfer beef + liver to a slow cooker. Add chopped onion, garlic, bell peppers, kidney beans, crushed tomatoes, broth, chili powder, and cumin.
  4. Season with salt and pepper. Stir well.
  5. Cook on low for 6-8 hours or on high for 3-4 hours.
  6. Serve the chili hot with your favorite toppings.
