Ingredients

  • 1 cup Plain yogurt
  • 1 cup Flour
  • 1 whole Egg
  • 2 tbsp Butter, melted
  • 1 tbsp Maple syrup
  • 1/2 tsp Sea salt
  • 1 tsp Baking soda

Instructions

  1. Pour yogurt into a bowl or quart jar with the 1 cup of flour.
  2. Cover + let sit on the counter overnight. (only do this if using yogurt, otherwise, put it in the fridge. The beneficial enzymes help protect against harmful bacterial growth.)
  3. In the morning, beat in 1 egg to the yogurt.
  4. Add maple syrup, salt + baking soda.
  5. Mix well.
  6. In a frying pan melt the butter and then mix well into the batter.
  7. Fry on a hot skillet for 1-2 minutes on each side.
