Spiced Beef Skewers

Ingredients

  • 1.5 pounds Beef sirloin or tenderloin, cubed
  • 1 whole Bell pepper, sliced
  • 1 whole Zucchini, sliced ½ inch round
  • 8-10 whole Mushrooms
  • 8-10 Cherry Tomatoes
  • 3 Tbsp Olive oil
  • 1 tsp Cumin
  • 1 tsp Smoked paprika
  • 1/2 tsp Garlic powder
  • 2 Tbsp Lemon juice
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix olive oil, cumin, smoked paprika, garlic powder, lemon juice, salt, and pepper.
  2. Thread beef cubes and vegetables onto skewers.
  3. Brush the skewers with the spiced olive oil mixture.
  4. Grill or broil the skewers for about 8-10 minutes, turning occasionally, until the beef is cooked to your liking.
  5. Serve hot.
