Ingredients
- 1 medium Sweet potato
- 1 tbsp Tahini
- 1/4 cup Olive oil
- 1 tbsp Lemon juice
- 1 clove Garlic
- 1 tsp Sea salt
- - Black pepper to taste
Instructions
- Roast the sweet potato whole in 400F/200C oven until tender. 45-60 minutes.
- Allow to cool. Scoop flesh into food processor. Add remaining ingredients and process until smooth.
- Season with salt & pepper.
