Sweet Potato + Sausage Frittata

Ingredients
- 1 large Sweet potato, peeled and thinly sliced
- 6 large Eggs
- 1/2 cup Milk of choice
- 8 oz Breakfast Sausage, cooked + crumbled
- 2 Tbsp Rosemary, fresh, chopped
- 1/2 cup Goat Cheese
- Salt and pepper to taste
- Olive oil for greasing
Instructions
- Preheat your oven to 375°F.
- Lightly grease a 9-inch pie dish with olive oil.
- Arrange the thinly sliced sweet potato in an even layer at the bottom and up the sides of the pie dish, forming a crust. Ensure there are no gaps between the sweet potato slices.
- Place the pie dish in the preheated oven and bake the sweet potato crust for about 15-20 minutes, or until the sweet potato slices are tender and slightly golden.
- Meanwhile, in a mixing bowl, whisk together the eggs and milk until well combined. Season with salt and pepper to taste.
- Stir in the cooked and crumbled sausage and chopped fresh rosemary.
- Once the sweet potato crust is done baking, remove it from the oven.
- Pour the egg mixture over the sweet potato crust in the pie dish, ensuring that the filling is evenly distributed.
- Sprinkle the crumbled goat cheese evenly over the top of the egg mixture.
- Return the pie dish to the oven and bake the frittata for 25-30 minutes, or until the eggs are set in the center and the top is golden brown.
- Once the frittata is cooked through, remove it from the oven and let it cool for a few minutes.
- Slice the frittata into wedges and serve warm.
