Sweet Potato + Sausage Frittata

Ingredients

  • 1 large Sweet potato, peeled and thinly sliced
  • 6 large Eggs
  • 1/2 cup Milk of choice
  • 8 oz Breakfast Sausage, cooked + crumbled
  • 2 Tbsp Rosemary, fresh, chopped
  • 1/2 cup Goat Cheese
  • Salt and pepper to taste
  • Olive oil for greasing

Instructions

  1. Preheat your oven to 375°F.
  2. Lightly grease a 9-inch pie dish with olive oil.
  3. Arrange the thinly sliced sweet potato in an even layer at the bottom and up the sides of the pie dish, forming a crust. Ensure there are no gaps between the sweet potato slices.
  4. Place the pie dish in the preheated oven and bake the sweet potato crust for about 15-20 minutes, or until the sweet potato slices are tender and slightly golden.
  5. Meanwhile, in a mixing bowl, whisk together the eggs and milk until well combined. Season with salt and pepper to taste.
  6. Stir in the cooked and crumbled sausage and chopped fresh rosemary.
  7. Once the sweet potato crust is done baking, remove it from the oven.
  8. Pour the egg mixture over the sweet potato crust in the pie dish, ensuring that the filling is evenly distributed.
  9. Sprinkle the crumbled goat cheese evenly over the top of the egg mixture.
  10. Return the pie dish to the oven and bake the frittata for 25-30 minutes, or until the eggs are set in the center and the top is golden brown.
  11. Once the frittata is cooked through, remove it from the oven and let it cool for a few minutes.
  12. Slice the frittata into wedges and serve warm.
