Winter Squash and Pesto Pasta with Shrimp

Ingredients

  • 1 pound Shrimp, peeled and deveined
  • 2 cups Winter squash, diced
  • 1/2 cup Pesto sauce
  • 8 ounces Pasta, cooked
  • 3 cloves Garlic, minced
  • 3 Tbsp Olive oil
  • 1/4 cup Parmesan cheese, grated
  • Salt and pepper to taste

Instructions

  1. In a skillet, heat olive oil over medium-high heat. Sauté minced garlic until fragrant.
  2. Add diced winter squash and cook until tender.
  3. Add shrimp to the skillet and cook until pink and opaque.
  4. Stir in pesto sauce and cooked pasta. Toss until well coated.
  5. Season with salt and pepper.
  6. Sprinkle grated Parmesan cheese on top.
  7. Serve the winter squash and pesto pasta with shrimp hot.
