Breakfast Burritos
Start the day with ample protein! These make for easy freezable breakfasts on busy days + to prepare as freezer meals for the postpartum period.

Breakfast Burritos
Ingredients
- 12 Eggs
- 2 medium Sweet Potatoes
- 1 pound gound Breakfast Sausage
- 1/2 tsp Cumin
- 1/4 tsp Chili Powder
- 10 Flour Tortillas
- 10oz Shredded Mozzarella or Mexican Cheese
- Olive Oil
- Sea Salt + Pepper, to taste
Instructions
- Preheat oven to 400F.
- Peel and dice the sweet potatoes.
- Toss with olive oil, salt, pepper, and spices.
- Roast the potatoes on a lined or greased sheet tray/baking dish until tender, about 20 minutes.
- Meanwhile, scramble + cook the eggs in butter or oil.
- Sautee the breakfast sausage.
- Once all the components are cooked, line up them all up in an assembly line.
- On each tortilla, add eggs, sweet potatoes, sausage, and top with shredded cheese.
- Roll into a burrito, wrap in parchment paper and place in a freezer safe dish or bag.
- To reheat, warm in the oven at 350F for 10 minutes within the parchment paper.
