Chocolate Zucchini Bread
This moist treat can be made into a bread loaf or makes an excellent sheet cake. For a first birthday (or any birthday) try cutting the sheet cake in half to layer it with cream cheese icing! Or divide it in 2 separate smaller cake pans.

Chocolate Zucchini Cake
Yield 9x13 sheet cake or 1 bread loaf
Ingredients
- 1/2 cup avocado oil
- 1/2 cup softened butter
- 1.5 cups coconut sugar
- 2 eggs
- 2 tsp vanilla
- 1/2 cup sour milk (use 1 tsp apple cider vinegar to 1/2 cup milk)
- 2.5 cups flour
- 5 Tbsp cocoa
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1 tsp sea salt
- 2 cups grated zucchini
- 1/2 cup chocolate chips
- optional: 1/2 cup chopped nuts
Instructions
- Beat the softened butter and coconut sugar together until smooth.
- Add eggs, vanilla and oil.
- Beat well.
- Add sour milk and sifted dry ingredients.
- Mix until smooth.
- Stir in the grated zucchini.
- Pour into a greased 9 x 13 baking dish for a cake or into a bread loaf pan.
- Sprinkle with chopped nuts and chocolate chips.
- Bake at 350F for 35-40 minutes.
- Allow to cool completely before removing from the pan.
