Butternut Squash Chicken Curry

Ingredients

  • (1lb) Chicken breast, cubed
  • (2 cups) Butternut squash, peeled and cubed
  • (1 can) Coconut milk
  • (2 Tbsp) Red curry paste
  • (1 medium) Onion, chopped
  • (3 cloves) Garlic cloves, minced
  • (1 Tbsp) Ginger, grated
  • (garnish) Cilantro
  • (to taste) Salt and pepper

Instructions

  1. In a pot, sauté chopped onions, minced garlic, and grated ginger until softened.
  2. Add chicken cubes and cook until browned.
  3. Stir in red curry paste and coat the chicken.
  4. Add butternut squash cubes and coconut milk. Simmer until squash is tender.
  5. Season with salt and pepper.
  6. Garnish with fresh cilantro and serve over rice.
