Butternut Squash Chicken Curry

Ingredients
- (1lb) Chicken breast, cubed
- (2 cups) Butternut squash, peeled and cubed
- (1 can) Coconut milk
- (2 Tbsp) Red curry paste
- (1 medium) Onion, chopped
- (3 cloves) Garlic cloves, minced
- (1 Tbsp) Ginger, grated
- (garnish) Cilantro
- (to taste) Salt and pepper
Instructions
- In a pot, sauté chopped onions, minced garlic, and grated ginger until softened.
- Add chicken cubes and cook until browned.
- Stir in red curry paste and coat the chicken.
- Add butternut squash cubes and coconut milk. Simmer until squash is tender.
- Season with salt and pepper.
- Garnish with fresh cilantro and serve over rice.
