Ingredients

  • 13.5-ounce can Coconut milk
  • 2 tsp Gelatin powder
  • grass-fed or pasture-raised
  • 2 tbsp Raw honey
  • Pinch sea salt
  • 1 cup Mango, peeled & diced

Instructions

  1. Shake coconut milk well, open and separate 1/2 cup into a bowl.
  2. Stir in gelatin to hydrate and set aside.
  3. Heat remaining milk, mangos, honey and sea salt in a small sauce pan.
  4. Bring to near simmer. You want the coconut milk steaming, but not boiling hot.
  5. Combine mangos and hot coconut milk with gelatin mixture in a blender and blend until smooth.
  6. Strain out any leftover mango fibers.
  7. Let pudding chill uncovered for 30 minutes.
  8. Stir and add to serving sized jars with tops to enjoy now or later.
