Ingredients
- 13.5-ounce can Coconut milk
- 2 tsp Gelatin powder
- grass-fed or pasture-raised
- 2 tbsp Raw honey
- Pinch sea salt
- 1 cup Mango, peeled & diced
Instructions
- Shake coconut milk well, open and separate 1/2 cup into a bowl.
- Stir in gelatin to hydrate and set aside.
- Heat remaining milk, mangos, honey and sea salt in a small sauce pan.
- Bring to near simmer. You want the coconut milk steaming, but not boiling hot.
- Combine mangos and hot coconut milk with gelatin mixture in a blender and blend until smooth.
- Strain out any leftover mango fibers.
- Let pudding chill uncovered for 30 minutes.
- Stir and add to serving sized jars with tops to enjoy now or later.
