Mushroom and Thyme Beef Stroganoff

Ingredients

  • 1 pound Beef sirloin strips
  • 8 ounces Mushrooms, sliced
  • 1 medium Onion, sliced
  • 1 cup Beef broth
  • 1/2 cup Sour cream
  • 2 Tbsp Dijon mustard
  • 1 tsp Thyme, fresh or dried
  • 8 ounces Egg noodles, cooked
  • 3 Tbsp Olive oil
  • Salt and pepper to taste

Instructions

  1. In a skillet, heat olive oil over medium-high heat.
  2. Sear beef sirloin strips until browned. Remove from the skillet.
  3. In the same skillet, add sliced mushrooms and onion. Cook until softened.
  4. Pour in beef broth and bring to a simmer. Stir in sour cream, Dijon mustard, and thyme.
  5. Return the beef to the skillet and cook until heated through.
  6. Serve the stroganoff over cooked egg noodles.
