Mushroom and Thyme Beef Stroganoff

Ingredients
- 1 pound Beef sirloin strips
- 8 ounces Mushrooms, sliced
- 1 medium Onion, sliced
- 1 cup Beef broth
- 1/2 cup Sour cream
- 2 Tbsp Dijon mustard
- 1 tsp Thyme, fresh or dried
- 8 ounces Egg noodles, cooked
- 3 Tbsp Olive oil
- Salt and pepper to taste
Instructions
- In a skillet, heat olive oil over medium-high heat.
- Sear beef sirloin strips until browned. Remove from the skillet.
- In the same skillet, add sliced mushrooms and onion. Cook until softened.
- Pour in beef broth and bring to a simmer. Stir in sour cream, Dijon mustard, and thyme.
- Return the beef to the skillet and cook until heated through.
- Serve the stroganoff over cooked egg noodles.
