Ingredients

  • 2 tbsp Butter, ghee, or coconut oil
  • 4 cloves Garlic, chopped finely
  • 1/2 inch Ginger, chopped finely
  • 2.5 cups Chopped pumpkin
  • 3 cups Water or bone broth
  • 1 cup Coconut milk
  • 1 tsp Sea salt
  • Cilantro garnish

Instructions

  1. Sauté garlic + ginger on medium heat in a med-large pot with butter, ghee, or coconut oil.
  2. Add water, coconut milk, pumpkin + sea salt.
  3. Bring to a boil.
  4. Reduce heat + simmer for about 15 minutes.
  5. Puree in a blender or hand immersion blender until smooth.
  6. Garnish with cilantro leaves.
