Pumpkin + Coconut Soup

Ingredients
- 2 tbsp Butter, ghee, or coconut oil
- 4 cloves Garlic, chopped finely
- 1/2 inch Ginger, chopped finely
- 2.5 cups Chopped pumpkin
- 3 cups Water or bone broth
- 1 cup Coconut milk
- 1 tsp Sea salt
- Cilantro garnish
Instructions
- Sauté garlic + ginger on medium heat in a med-large pot with butter, ghee, or coconut oil.
- Add water, coconut milk, pumpkin + sea salt.
- Bring to a boil.
- Reduce heat + simmer for about 15 minutes.
- Puree in a blender or hand immersion blender until smooth.
- Garnish with cilantro leaves.
