Ingredients

  • 1/2 cup Coconut Sugar
  • 1/2 cup Butter or Coconut Oil
  • 2 whole Egg
  • 1 can Pumpkin
  • 1/2 cup Applesauce
  • 1 tsp Baking Power
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 2 cups Flour or Gluten-free Flour
  • 2 tsp Pumpkin Pie Spice
  • 1/2 cup Yogurt or Coconut Yogurt

Instructions

  1. Preheat oven to 350F / 177C.
  2. Whisk together the butter and sugar until creamy, 1-2 minutes.
  3. Add the pumpkin + applesauce.
  4. Add eggs one at a time.
  5. In a medium-sized bowl, mix the flour, baking soda, baking powder, pumpkin spice, and salt.
  6. Add the dry mix to the butter mix.
  7. Add the yogurt to the batter.
  8. Mix until just combined.
  9. Line or grease a muffin tin and spoon in the batter about 3/4 full.
  10. Bake for 24 minutes or until golden brown.
