Ingredients
- 1/2 cup Coconut Sugar
- 1/2 cup Butter or Coconut Oil
- 2 whole Egg
- 1 can Pumpkin
- 1/2 cup Applesauce
- 1 tsp Baking Power
- 1 tsp Baking Soda
- 1/2 tsp Salt
- 2 cups Flour or Gluten-free Flour
- 2 tsp Pumpkin Pie Spice
- 1/2 cup Yogurt or Coconut Yogurt
Instructions
- Preheat oven to 350F / 177C.
- Whisk together the butter and sugar until creamy, 1-2 minutes.
- Add the pumpkin + applesauce.
- Add eggs one at a time.
- In a medium-sized bowl, mix the flour, baking soda, baking powder, pumpkin spice, and salt.
- Add the dry mix to the butter mix.
- Add the yogurt to the batter.
- Mix until just combined.
- Line or grease a muffin tin and spoon in the batter about 3/4 full.
- Bake for 24 minutes or until golden brown.
