Sausage + white bean + greens soup

Ingredients
- 4 cups Bone broth
- 2 cups Fresh or frozen spinach, or any other greens
- 1 cup Onion, diced
- 2 cloves Garlic, minced
- 1 lb Italian sausage
- 1 cup White beans
- 1/4 cup Olive oil
- Kosher salt, to taste
- Black pepper, to taste
Instructions
- Add 2-3 tbsp of olive oil to a large pot.
- Cook Sausage until brown.
- Remove sausage and drippings and set aside.
- Sauté onion until softened.
- Add garlic and cook until fragrant.
- Add sausage, greens, broth, and beans.
- Bring to a boil and let simmer.
