Sourdough Crepes

Ingredients
- 6 whole Eggs
- 1 cup Sourdough starter
- 1 tbsp Maple syrup
- 1/2 tsp Sea salt
- 1 cup Milk or alternative
- 1 tsp Vanilla extract
- Cinnamon, ground dash
Instructions
- Combine all ingredients in a blender on low.
- Scrape sides to make sure all flour is incorporated.
- On a hot skillet with plenty of butter, pour enough batter to cover a thin layer over the entire bottom of the pan.
- Once the top begins to bubble and is mostly cooked through, fold it into a triangle with a spatula and place it onto a plate on the side.
- Serve with fresh berries, maple syrup, or a squeeze of lemon and a sprinkle of sugar. Alternatively, serve with savory ingredients.
