Spinach Frittata

Ingredients
- 4 large Eggs
- 2 tbsp Milk
- 1 tbsp Olive oil
- 1/2 medium Onion, chopped
- 1 Garlic clove
- 4 oz Spinach, chopped
- Sea Salt pinch
- 1 tsp Black pepper
Instructions
- Stir eggs, milk, and salt together with a fork.
- Heat a small skillet on medium heat. Add onion and cook until translucent. 4-5 Minutes. Add garlic and cook for an additional minute. Add spinach, one handful at a time as spinach wilts.
- Spread the mixture out evenly in the pan. Pour Egg mix over onions and spinach, and use a spatula to lift the spinach, allowing the egg to flow underneath.
- Lower heat and cover. Cook on low heat for 9-12 minutes, until the center of the frittata is set. Cut in wedges to serve.
