Spinach Frittata

Ingredients

  • 4 large Eggs
  • 2 tbsp Milk
  • 1 tbsp Olive oil
  • 1/2 medium Onion, chopped
  • 1 Garlic clove
  • 4 oz Spinach, chopped
  • Sea Salt pinch
  • 1 tsp Black pepper

Instructions

  1. Stir eggs, milk, and salt together with a fork.
  2. Heat a small skillet on medium heat. Add onion and cook until translucent. 4-5 Minutes. Add garlic and cook for an additional minute. Add spinach, one handful at a time as spinach wilts.
  3. Spread the mixture out evenly in the pan. Pour Egg mix over onions and spinach, and use a spatula to lift the spinach, allowing the egg to flow underneath.
  4. Lower heat and cover. Cook on low heat for 9-12 minutes, until the center of the frittata is set. Cut in wedges to serve.
